‘Samarkand chickpea broth’ registered as a geographical indication
By Abdulaziz Yuldoshev from Xalq So‘zi.
Under the Law "On Geographical Indications", a geographical indication is defined as a sign that identifies a product as originating from a specific geographical location, where the product’s quality, reputation, or other characteristics are significantly linked to its geographical origin.
The Ministry of Justice is the authorized body responsible for the legal protection of geographical indications. With the support of the Samarkand Regional Department of Justice and the state institution “Intellectual Property Center,” Samarkand nohot shurak — or Samarkand chickpea broth — was officially registered as a geographical indication on July 3 of this year.
Today, Salohiddin Sattorov, head of the Samarkand Regional Department of Justice, presented the official certificate for geographical indication to Adiz Boboev, acting governor of Samarkand region.
The preparation process of Uzbek national dishes and the culture of dining have a long-standing history, deeply rooted in the centuries-old traditions and experiences of the Uzbek people. Local customs and traditions have evolved in line with the region’s climatic conditions and lifestyle. Each region has developed its own unique style in preparing national dishes, resulting in distinct culinary styles across different areas.
One of the unique features of Samarkand chickpea broth is the combination of boiled meats and bone marrow, served in a rich broth, along with pieces of Samarkand bread that have been dried at room temperature for one to two hours — all of which create a distinctive and layered flavor profile.
